I was wondering if i called some one from my google voice number how much information could be found out about me?

Now regarding your question... Most of the companies do not reveal too much infos about their users to public..only to police or on a court order ?! Isn't that bad right ?)

You can give out your GV number as much as you want, its next to impossible to get any information off of it
